Week Ended Pretty Decently – Some Good Points of my Week

While my birthday week started off rather rough and still has some rough patches to be worked out, overall I had some wonderful moments this week with my children. For instance, each morning I was wide awake well before they were rolling out of bed or at least well before they were wide awake yet. I was able to make the children breakfast every day this week, the menu was scrambled eggs for the youngest and a fried egg sandwich for the older two. This made my kids week knowing that Mama was cooking breakfast each morning for them with love.

Actually allowed me to put her hair up in a stylish way. Lately her look of choice has been simply having her hair down, but on this particular morning she allowed me to do the stylish messy bun look that I think is super cute on her.

Overall there were so many fun times, you see I have been spending too much time worrying about this, that and the other thing lately that I realized my kids were not getting the goofy, happy Mama that they are used to having.

I made a conscious decision to get silly again, all week long, even though my adult life is rather stressful for me, being a Mom is not stressful really. It’s easy to love my kids, they are the best and have the cutest personalities ever. I took time to play, giggle, tickle and laugh with these three every chance I could this week and for having that much quality time together, I say my week ended well.

Making Egg Salad Sandwiches

Egg salad sandwiches are a favorite in my home with the ten and six year old. I personally prefer a nice egg salad sandwich on toasted bread with a piece of cheese and some salt sprinkled on it. Today I share with you how I make my egg salad ….

how do I Make egg salad


  • 6 hard boiled eggs
  • 2 tablespoons mayo or salad dressing
  • bowl
  • spoon and fork
  • tsp of salt
  • bread

Make The Egg Salad

Place six eggs into a pan and fill with water. Place on stove on high heat, bringing to a boil. Once the water reaches a boiling point, let eggs boil for 10 minutes.

Pour the eggs from hot pan into a bowl that won’t suffer from having boiling hot water dumped on it under cold running water in the sink. Run cold water on the eggs, keep eggs in a bowl covered in cold water. Put the bowl with hard boiled eggs covered in water in fridge for about ten minutes.

Prepare a bowl with mayo or salad dressing on side, a fork and a tablespoon.

Take the eggs out of the fridge and peel off the shell. Wash each egg off in cold faucet water prior to placing in your mixing bowl.

Use the fork to mash up the eggs and egg yolk until it’s fine without  a lot of chunks. This is where you can play with a texture that works best for you.

Add two tablespoons of mayo or salad dressing to the bowl of chopped up eggs. Mix well.

Make Your Sandwich

Take two pieces of bread, you can toast them in the toaster if you prefer first. Add some egg salad to one of the pieces of bread, top with a sprinkle of salt {if desired} then a piece of cheese {if desired}. Place other piece of bread on top and voila you have your very own egg salad sandwich.

Servings - makes approximately 6 egg salad sandwiches on regular sized sandwich bread.
