As most of you know I am a busy work at home mother of three. I have a couple blogs, I write on ELM now and I have a business to run, so when it comes to dinners I am usually a boxed meal kind of Mom, however, I have learned that obviously these are not the best nutritious meals for my family. Note that I will never stop making boxed meals or pre-made meals ever but I am trying to do a bit more cooking. The only problem is that with cooking comes finding the time to cook while tackling three children. Okay so my oldest is fine if I cook, she actually would help me, but the other two munchkins enjoy getting under foot just as soon as I start the process of making dinner!
That picture may not 100% appealing to you, because it’s a two year old’s plate, don’t mind the couple of pears, that’s another story for another day. So here it is, what I have been doing at least once a week and it’s quick and easy to do with little ones running around! The shoutout goes to Miss Sheila for giving me the idea one night while I text her saying I have chicken breast and no clue what to do with it, usually I use crock pot, but it’s too late to do that now. Thank you Sheila!
Easy Bake Chicken
- 1-2 packages of boneless, skinless chicken breast.
- 2 Bottles of Italian Dressing, or one large bottle.
- Tablespoon of minced garlic.
Clean your chicken breast and place into a container. Take a fork and poke holes into the chicken. Pour enough italian dressing over the chicken breast to cover all of the meat. Cover with saran wrap, aluminum foil or matching cover for the container. Keep chicken in fridge for 1-2 hours to marinate.
Get Ready To Bake
Preheat the oven to 375 degrees. Take the container that has marinated chicken breast in it and drain out all of the juices. Take a fork and place chicken breast into an oven safe container. Pour some fresh italian dressing (directly from the bottle) onto the chicken breast. For added flavor add one tablespoon of minced garlic sprinkled on top of the chicken.
Place the oven safe container into the oven and set timer for 45 minutes. Check the meat prior to eating to ensure it is white all the way through or use a meat thermometer to ensure the chicken breast has been cooked thoroughly.
I have used the 45 minutes for both one and two packages of chicken breasts {up to 3lbs of meat}, it worked nicely for a time, but all ovens vary so please be sure that the meat has been cooked all the way through to avoid food poisoning.
I use italian dressing with shaved beef in the crockpot sometimes, and that’s really good too!
I love baking chicken as well as using my crockpot. It’s usually so tender that way. Sounds good!
This sounds really great. I have made italian chicken by using the dry italian season pack, but the bottled kind sounds like it would be fabulous too! I am going to add this to my must try soon recipe tab.
