I run a mostly vegetarian household and several of those dishes are part of our weekly food plan. The summer time offers us even more fresh items to add to the list. 🙂

I’m always surprised at how delicious vegan dishes look. I think it would not be as difficult as I originally thought to transition into this kind of lifestyle.
