Traditional chicken parm is certainly a loved favorite of mine and my children but when making the normal chicken patty chicken parm for a larger family, it can get costly. I found out that I could create your average recipes using chicken breast but cut into 1″ chunks to ensure my sometimes 7 person family can enjoy a home cooked meal for less of the cost for traditional chicken parm. Please share this recipe if you think anyone else would love it as much as my family does.

Sure to make the whole family smile, Happily Blended Chicken Parm is a delicious treat for larger families with less cost than traditional chicken parm.

Ingredients
  1. 1lb boneless skinless chicken breast
  2. 2 cups spaghetti or marinara sauce
  3. 2 cups shredded cheddar or mozzarella cheese
  4. 5 tbsp Olive Oil
  5. 2 tsp Minced Garlic
Instructions
  1. Preheat oven to 450 degrees F.
  2. Cut chicken breast into 1" sized chunks. Heat skillet with olive oil and minced garlic, add chicken breast chunks once skillet has warmed up. Cook with cover on skillet via medium heat until chicken chunks are fully cooked, stirring occasionally.
  3. Place fully cooked chicken chunks in bottom of casserole dish.
  4. Pour spaghetti or marinara sauce evenly over fully cooked chicken chunks, ensuring to cover all pieces of chicken.
  5. Spread shredded cheese over top of the sauce in casserole dish.
  6. Place casserole dish in 450 degree F preheated oven for 15-20 minutes or until sauce is warmed and cheese is melted.
  7. Enjoy.

It’s Almost PARTY TIME! My Oldest Turns 9

This is the year, the year that Miss Ki turns 9 and she starts getting taller and smarter if that’s at all possible. This girl is already a walking encyclopedia and is only about 10″ shorter than me. I swear I feel like I am shrinking, even though the tape measure says I am still 5’6″ tall.

This year Miss Ki is not only a fifth year soccer player but she is also in cheerleading. It’s so fun to watch her build an awesome self esteem this year through cheerleading and soccer. I have enjoyed watching this little girl who once was two saying dog toys were “interesting” and is now saying “my heritage is interesting” grow older. Love this girl to pieces!

This birthday party on October 8th {the day my princess turns 9} will be awesome! The Trashies are coming as gifts for guests, Ragu Pizza Cupcakes & quite possibly Ragu chicken parm will be served, fun and games as well as just smiles & laughter will happen. I can’t wait to have a big celebration for my lovely daughter and watch as she gets another year older.
