English Muffin Pizzas

Before I went grocery shopping last week I decided to go through my cupboard and see what I could find down there. Not only did I realize I have like three jars of salsa {can we say prepared for nachos?} but I saw I had a jar of pizza sauce. Not sure when I bought it but it hadn’t expired. My mind started thinking what can I do with pizza sauce besides the obvious, make a pizza, and then suddenly it dawned on me what my friend does. My friend used to make english muffin pizzas on occasion when our kids would play together.


I thought what a great idea for lunches over the weekend and so my boys helped me make some on Friday and then again on Saturday we made some with my daughter. I couldn’t get AJ to eat the english muffin pizzas nor would Baby K but they all had a blast making them. Justin put in a request and so AJ had fun pretending to complete orders like we were in a restaurant, it was adorable.

We used pepperoni, mozzarella cheese and cheddar cheese, each pizza was made to order based on what each of us preferred. It was a fun family time and delicious lunch time afterwards!

I Love Crock Pot Recipes

As a busy Mom of three children my crock pot has become my best friend. I can easily get up at the crack of dawn with my 3 year old who just loves to wake up the moment light shines through and start dinner on low in my trusty crock pot. I have tried placing a dark curtain (rather sheet as I don’t have extra curtains for his room) over his window and everything but my sweet AJ seems to know exactly when the sun comes up and scream “Mama it light out, you come get me”.

My crock pot makes it easy for me to pile everything into it, turn it on low and leave it there all day so that come 5 or 6pm dinner is pretty much ready, unless I am making something to go with it, then I cook that on the stove which takes 10 minutes or less. So basically for 10 minutes of my time I can have a full course meal for my three children and me!

I was checking out my email blog subscriptions yesterday when I happened upon a great crock pot meal idea that is affordable and sounds delicious. Go Graham Go has the recipe listed on her blog for Crock Pot Barbecue Chicken. I plan to buy the supplies needed during my next grocery shopping trip to Walmart so that I can taste test this delicious recipe idea!
