I was able to recently review a cookbook featuring Casa Di Bertacchi Meatballs, however, these meatballs are only available at Sam’s which is not a place I have ever shopped and the closest one is too far away for me to travel since receiving the cookbook. I have had many car troubles. *sigh*
I wonder if you all have tried Casa Di Bertacchi Meatballs? They sound like they would make a great appetizer and so I would love to feature a recipe that everyone should try to make with our without your children. The recipe book is called 1010 Things to Do With Meatballs and this is my favorite recipe thus far for a meatball appetizer dish.
1/2 medium onion, finely chopped
2 Tablespoons olive oil
2 teaspoons mince garlic
1 can (28 ounces) crushed tomatoes
1/2 teaspoon sugar
2 teaspoons Italian seasoning
3/4 teaspoon salt
20 frozen, fully cooked Casa Di Bertacchi Meatballs, thawed
20 (2 inch) soft buns or rolls
Time to make the appetizer:
In a 4 quart pan, saute onion in oil until tender. Add garlic and saute 1 minute more. Stir in tomatoes, sugar and seasoning. Simmer 10-15 minutes over medium heat, stirring occasionally. Add meatballs to the sauce. Cover the pan and continue to cook over medium heat 10-15 minutes more, stirring occasionally, until meatballs are heated through. Place a meatball and 1 teaspoon sauce in the middle of each split roll. Secure each meatball to the bun with a toothpick. Serve immediately. Makes 20 appetizers.
Note: any leftover sauce can be used for dipping bread sticks or serving over hot cooked pasta later.
